I love the ideas you share for how to teach networking, and I share your sadness that corporate IT policies are so incompatible with CS learning. I guess that probably helps students feel like the stuff they're learning is powerful, since it's forbidden?

One workaround I've found in the past is working with Raspberry Pis, which are more than capable of doing everything we need to do for CS, and which IT departments generally don't regard as computers. I could imagine a local wireless network in the classroom which isn't even connected to the Internet, which students could use to serve websites and webservices to each other...
